The Kitchen Wild: Dungeness crab the right way - Newport News Times

After a two-week delay, it’s officially crab season here on the Oregon coast, and with commercial crabbing being one of Oregon’s most valuable fishing industries it’s no doubt that you’ll be able to snag fresh Dungeness crab at any of your favorite local seafood markets starting this week. Which means lots of holiday Dungeness crab coming to our tables!

What I always look forward to most about this time of year is sharing the season’s festivities with loved ones, especially gathered around delicious food. And now that my family and I are living here on the Oregon coast there’s a good chance that holiday eats will always include Dungeness crab from here on out.

My mother-in-law, Barbara Wiley, who was born and raised in Maryland, grew up on Blue Crab and was wanting to incorporate those east coast flavors into our new west coast Dungeness crab dinners. So she called her brother Billy who owns Mega Bite Fishing Charters in Edgewater, Md, to find out how he cooks up those Maryland blue crab that she grew up eating, so we cooked some up just the way Billy told us to and they were so good! So good in fact, we may not ever do a crab boil any other way ever again.

What’s the secret to that east coast flavor you might be asking? It’s just about as easy as it gets.

Cooking Crabs

Fill your steamer with 1:1 ratio water and distilled white vinegar, just enough liquid to fill the bottom of your pot to steam, but not enough liquid to submerge the crab (we have a large 82 quart. Bayou Classic stainless boiler so we used 3 cups water and 3 cups vinegar for our 36 Dungeness crab). We also add a little sea salt into our water.

•Steam for 15 minutes

•Remove from steamer, spritz warm crab with apple cider vinegar (we have our vinegar in a spray bottle), then cover those crab with J.O. Crab Seasoning No. 2. This last step is the most important! If you haven’t tried J.O. Crab Seasoning*, stop what you’re doing this very moment and order some! It’s spicy, salty goodness is for seafood! And if you ask me, Old Bay isn’t an acceptable substitute... but that’s been a debate going all the way back to the 1940’s.

•Another tip is to sprinkle a little extra pile of J.O. Crab Seasoning on your plate to dip the crab meat into for a little more spicy, salty deliciousness!

•Then just grab some napkins and enjoy!
