We visited with friends in Florida over Thanksgiving and, yes, because of COVID-19, they were in isolation before our visit and we were very careful driving down with gloves for pumping gas, sanitizing wipes and hand sanitizer. We packed a car picnic so we didn’t have to go into restaurants. So we made the trip to the warmer clime and back without incident.
In addition to the traditional Thanksgiving fare, one night our hostess served the shrimp dish from the recipe below. It was delicious and of course, I asked for the recipe. It was the first dish her husband cooked for her when they were dating and she has made it often since then. She served the dish with Dilled Persian Rice using the recipe below.
Shrimp with Feta Cheese
1 small onion, chopped
¼ cup white wine
2 ½ cups chopped fresh tomato
½ teaspoon dried oregano
½ teaspoon crushed red pepper
¼ teaspoon salt
1 pound peeled and deveined shrimp
2 ounces feta cheese crumbled
2 tablespoons chopped fresh basil
In saucepan, cook onion in wine; add tomatoes, parsley, oregano, red pepper and salt. Cook over low heat for 10 minutes.
Add shrimp and cook until pink (2-3 minutes). Stir in cheese. Sprinkle with fresh basil and serve.
Dilled Persian Rice
½ medium onion, chopped
1 teaspoon safflower oil
¾ cup white basmati rice
1 ½ tablespoons pine nuts
3 teaspoons chopped fresh dill
1/3 teaspoon ground coriander
1 2/3 cups water
¼ teaspoon salt
In saucepan, sauté the onion in oil 2-3 minutes. Add rice, pine nuts, dill and coriander. Sauté 2 minutes.
Add water and salt. Bring to a boil, then cover and reduce heat to a low simmer. Cook 15-20 minutes
