Recipe for: Spicy Tuna
• Fresh tuna sushi grade
• Cajun seasoning
• Arugula
• Cucumber
• Julienned red onions
• Shaved fennel
• Avocado
• Lime juice
• Salt and pepper to taste

- Cut tuna in 3-4oz cubes
- Rub cajun seasoning on the tuna
- In a pan heat oil on medium temp
- Sear al the sides for 10 seconds on each side
- In a mixing bowl add al the ingredients and toss them together
- Slice the tuna
- Place the salad in a plate and topped with the tuna
Dressing suggestion
2 parts soy sauce 1-part honey
Recipe for: Roasted Fish
• Fish filet (preferable skin on)
• Chile puree (3 dried chilis, ½ tsp cumin,1cup water)
• Olive oil
• Salt and pepper
