Palm Beach dining: Stone crabs to make their way back onto diners' plates - Palm Beach Daily News

A revered delicacy is about to make its annual return to iced platters at the island’s restaurants.

That’s because the commercial and recreational harvesting season for stone crab, one of Florida’s gastronomic claims to fame, begins Thursday after an annual state-mandated five-month hiatus.

Starting Thursday, crabbers can start hauling up their first catch in traps they set earlier this month.

That means that by Friday and/or Saturday, various restaurants in town will start serving what has made stone crab famous: the crustacean’s claws, filled with sweet meat traditionally enjoyed with lemon and a light mustard dipping sauce.

Stone crab season continues through May 15.

At the start of stone-crab season each year, Palm Beach seafood-and-raw-bar stalwart PB Catch, 251 Sunrise Ave., often celebrates with a stone crab-themed evening.

This year, it takes place Friday, with two-for-one drinks offered all night with the purchase of any order of market-priced stone-crab claws.

PB Catch’s head chef Aaron Black has arranged to have various sized claws on hand. Over the years, the most popular size in Palm Beach has been jumbo, the second largest after those classified as “colossal.” Other sizes include large, medium and small.

Throughout the season, claws will be offered, depending on availability, at PB Catch and other eateries in town that feature raw-bar fare.

During PB Catch’s stone crab night, the restaurant’s a la carte menu will be offered. Stone crab will be available starting at 5 p.m. during the restaurant’s happy hour, which features, among other things, two-for-one oysters and $5 appetizers.

Stone-crab claws are said to be a renewable food product because when fishermen catch crabs and remove regulation-sized claws, they return the crabs to the ocean, where the crustaceans have the ability to regenerate their claws.
